Beta vulgaris is an edible plant and herbal medicine traditionally used to treat diabetes breast cancer protect against liver damage induced by HF diet. The aim of this investigation evaluate the inhibitory activity B. (CH) extract on formation advanced glycation end products (AGEs) fluorescent Non-fluorescent AGEs, protein oxidation, aggregation in vitro model glucose fructose Congo red test. Our study provides evidence that CH significantly reduced no (Nε-CML) fructosamine levels AGEs-BSA systems during four weeks study. It also avoided which was shown depletion thiol carbonyl, preventing structural loss AGEs inhibiting oxidation glycation. Furthermore, inhibited amyloid cross β-structure increased GPx enzymatic activity. This demonstrated has a noticeable antiglycation effect varied modification albumin can retard or forewarn AGEs-related type 2.
